I Used to Think No-Bake Desserts Were BS—Then I Found This Recipe

I grew up in Southern California. Not by the beach or in glitzy L.A., but way, way far inland where it gets VERY hot during the summer. Like, 118 degrees hot. I wish I was kidding. When I was a kid, as soon as June rolled around, making anything in the oven was totally off-limits. “You want it to be hot inside and outside?” my mom would ask. No I didn’t, but I did want to make desserts. And as far as I was concerned, no-bake desserts didn’t count.

Well I was a dumb kid, let me tell you. For some reason I had this warped idea that if you didn’t “bake” a cake or a pie or whatever, it wasn’t legit. To be honest, I still kind of thought that until recently. But then I met the Barefoot Contessa’s Mocha Icebox Cake, and my mind was forever changed.

This cake is a wonder. It’s made by layering coffee- and mascarpone-infused whipped cream with store-bought chocolate chip Tate’s cookies (the good kind), and it tastes like a cross between cheesecake, ice cream, actual cake, and pie. So basically every dessert you could possibly want.

And (duh) it doesn’t require any baking. You do have to get out a stand or hand mixer to make the whipped cream, but that’s as labor intensive as it gets. Make it for a summer barbecue, a fourth of July party, or even when it’s just really hot in your apartment and you don’t want to sweat for something sweet. If you do that last option, know that it’s so big that it’ll last you all week (speaking from experience).

Now that I’ve been convinced that no-bake desserts are worthwhile, I’m excited to try my hand at some other recipes. These are some ideas I’m really looking forward to making. To be clear: They aren’t healthy. Not in the slightest. But it’s totally cool to treat yourself from time to time—especially when it’s hot out and a no-bake dessert is exactly what you want.
